Here are three easy dinner ideas for a busy work/school night! These recipes can also be prepared in advance, making your busy week that much easier.

Chinese Noodle Chicken

Ingredients:

  • ¼ cup flour
  • ½ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • Pinch of salt
  • Pinch of black pepper
  • 3½ cups Chinese noodles
  • 2 eggs
  • 5 very thin chicken cutlets, cut into thin strips
  • Cooking spray

Directions:

  1. Preheat oven to 350°F.
  2. Combine spices and flour together. Place Chinese noodles into a food processor and pulse until they are crumbs.
  3. Place the flour mixture, eggs, and Chinese noodle crumbs into three separate bowls. First coat each piece of chicken in flour, then egg, and then the Chinese noodle crumbs. Place chicken on a metal baking sheet lined with parchment paper. Spray each piece of chicken liberally with cooking spray.
  4. Bake chicken in oven, uncovered, for 20 minutes.

Mini Broccoli and Onion Quiches

Equipment:

  • Muffin tins

Ingredients:

  • 2 tablespoons oil
  • 1 onion, diced
  • 1½ cups frozen chopped broccoli
  • ½ cup flour
  • 1 egg
  • ¼ cup milk
  • 1 frozen garlic cube
  • ¼ teaspoon salt
  • Pinch of black pepper
  • 1½ cups of mozzarella, divided
  • Cooking spray
  • Package of frozen mini pizza dough rounds, defrosted

Directions:

  1. Preheat oven to 400°F.
  2. Heat a pan with oil and add diced onion. Sauté until golden-brown. Set aside to cool.
  3. Place broccoli in the microwave for two minutes and set aside to cool. In a bowl, combine flour, egg, milk, garlic cube, salt, pepper, half a cup mozzarella cheese, and cooled onions and broccoli.
  4. Spray muffin tins with cooking spray. Add pizza rounds to muffin tins. Fill them with the broccoli–cheese mixture. Top with the extra mozzarella cheese.
  5. Bake in oven for about 15–20 minutes or until the cheese is melted and golden.

Crispy Cheese Potatoes

Ingredients:

  • 5 Idaho potatoes
  • 3 tablespoons oil
  • ½ teaspoon garlic powder
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • Pasta or marinara sauce
  • Shredded mozzarella cheese

Directions:

  1. Preheat oven to 400°F.
  2. Wash potatoes very well and cut in half lengthwise. Line a metal baking sheet with foil and pour oil on it. Add garlic powder, salt, and pepper to the foil-lined sheet. Using a brush, coat the pan evenly with the oil and spice mixture. Place the potatoes cut side down and leave 2 inches between each in order for each potato to get crispy.
  3. Bake in oven at 400°F for 25 minutes. Lower temperature to 350°F and flip each potato onto the other side. Bake for an additional 25 minutes.
  4. Top potatoes with sauce and cheese and return to oven on broil or bake until cheese is melted.
