5TJTBreakfast is said to be the most important meal of the day. It’s the fuel you need to give you the energy to tackle what’s to come. Although there is such importance to this meal, it is often overlooked during the morning rush when most are just trying to get out the door. On a day off, spending time preparing a hearty breakfast with all the frills can be a great way to slow down and appreciate time with your family. The best part is that it does not take too much effort to make a special, elegant breakfast. All you need is a little planning, minimal preparations, and just a bit of TLC.

Pancakes. A pancake batter couldn’t be simpler and quicker to make. Whisk together the ingredients and fry them up in batches. Use multiple frying pans for quicker results. To make them interesting, incorporate fresh berries or chocolate chips, or top with fruit, syrup, and confectioners’ sugar.

French Toast. A great way to use up stale bread, it’s a hearty and satisfying breakfast made of your choice of bread soaked in an eggy mixture and fried to golden perfection. Mix in cinnamon and sugar to the batter and top with syrup, jam, or fresh fruit.

Waffles. A waffle-iron is required for this delicious breakfast treat. Any ingredient can be added to the batter to make it unique, from cinnamon to lemon zest. Serve with syrup, jam, or fresh fruit or make it even more indulgent with a scoop of ice cream on top.

Frittata. A quick egg dish, a frittata is filled with all kinds of vegetables and cheeses and cooked like a large omelet, then cut into wedges to serve a crowd.

Strata. This dish is great for breakfast or brunch, like a casserole made of eggs, cheese, and bread. It is layered, chilled, and then baked for a delicious meal with numerous combination possibilities.

Muffins. Muffins are a great option for individual portions. Delicious with coffee, many flavor options, and they can be made in advance and frozen for another time.

Pancakes With Caramelized Bananas

Ingredients:

2 Tbsp. unsalted butter substitute
1 1/3 cups whole milk
2 eggs
1 1/2 cups flour
2 heaping tsp baking powder
1 tsp sugar
pinch of salt
4 ripe bananas
10 Tbsp. sugar
confectioners’ sugar
maple syrup as desired

Directions:


Melt butter in pan or microwave and cool slightly. In a blender or large bowl, mix milk and eggs. Combine flour, baking powder, sugar, and salt and then add to milk and egg mixture.

Heat a nonstick frying pan and spray with nonstick cooking spray or coat with a little butter. Fry 1/4 cup of batter for each pancake. Turn over when batter begins to bubble through. Continue until all batter has been fried. Cover and set aside.

Slice bananas on an angle to create oval coins. Toss bananas in sugar to coat. Spray nonstick pan with cooking spray and place over medium-high heat. Cook bananas until golden brown, careful not to burn, about 4-5 minutes. Flip over and cook another minute. Top pancakes with bananas and dust with confectioner’s sugar.
