There are so many ways to enjoy chicken. Grilled chicken might sound like diet food to meat lovers, but a good piece of juicy grilled chicken can outshine a steak any day. From barbecue sauces to spice rubs, grilled chicken has so many variations, you won’t get bored all summer.
Marinated chicken. Marinate chicken in fresh herbs and spices for a flavorful, spicy jerk chicken or a simple marinade of lemon juice and rosemary or thyme. Marinades ensure the chicken will stay juicy and moist.
Chicken burgers. Infusing barbecue flavor into ground chicken burgers can be a light and delicious substitute for the regular old beef burger.
Pesto chicken. Grill chicken breast and top with a fresh pesto sauce made of your choice of herbs or greens and nuts. Spinach and pine nuts or basil and walnut make great pesto options.
Chicken tortillas. Grill everything from the chicken to the onions, then slice it all up and fill grilled, toasted tortillas and top with slaw, salsa, or guacamole.
Beer-can chicken. This amazingly moist and juicy way to cook whole chicken will be a showstopper at your next barbecue. Simply place seasoned chicken over a half-full beer can and let the beer steam the chicken from the inside and infuse the chicken with flavor.
Chicken wings. The finger food no one can get enough of, chicken wings are so simple and delicious. Glaze in barbecue sauce or just coat with flour and cook till crispy. Dip into or top with your favorite sauce.
BBQ sauce chicken. You can’t go wrong with barbecue sauce on the grill, and making your own is not as complicated as it sounds. Take a small pot and mix in ingredients like ketchup, mustard, soy sauce, garlic powder, and onion powder. Add your favorite flavors like mango, pineapple, teriyaki, or balsamic vinegar to put your own twist on the sauce.
Grilled Beer-Can Chicken
Ingredients:
1 whole chicken, 4–5 lb. olive oil for coating 1 12-oz. can of beer, opened and half full 1 tsp. brown sugar Italian seasoning, for seasoning paprika, for seasoning kosher salt and fresh black pepper
Directions:
Prepare a gas grill for indirect heat by heating up one side of the burners. Clean chicken and pat dry. Rub all over with olive oil and brown sugar. Sprinkle liberally with Italian seasoning, paprika, salt, and pepper. Place chicken over can of beer and place on grill so chicken stands upright. (Use legs to help balance chicken if needed.)
Place chicken on unlit side of grill and cover with lid. Leave to cook for at least an hour. Check chicken to make sure it is fully cooked. Cooking times will vary, depending on the grill and size of chicken, but approximately 1 1/2 hours. Check for doneness by placing meat thermometer or knife into thigh and check that juices run clear. Carefully remove chicken with oven mitts and tongs and let rest 10 minutes before serving.
