4 cups peeled and shredded potatoes 3 tablespoons grated onion 6 eggs, well-beaten 5 tablespoons all-purpose flour 3 teaspoons salt 1/2 cup vegetable oil for frying
Directions
In a medium bowl mix potatoes, onion, eggs, flour and salt together. In a large skillet over medium-high heat, heat the oil until hot. Place rounded scoops of the potato mixture into the hot oil, pressing down to form patties. When brown on one side, turn and brown on the other. Drain them on paper towels. Serve hot!
