Yields 6 servings (dairy)
With this recipe, maybe you can get your youngsters (and men) to eat their broccoli!
Ingredients: 1 Tbsp. butter 3 Tbsp. minced garlic 3 Tbsp. minced yellow onion 1 Tbsp. flour 2 cups heavy cream 1/2 tsp. salt 1/8 tsp. ground black or white pepper 8 oz. grated Fontina cheese 1/4 cup grated Parmesan cheese 2 large heads broccoli, cut into small florets, stems cut crosswise into 1/4" slices 2 cups package baked cheese curls (Herr’s brand), crushed by hand
Directions: Melt butter. Add garlic and onion, sauté 1 minute (no color), and remove from heat. Stir in flour gradually; add heavy cream, stirring until well mixed. Add the salt and pepper. Cook over low heat, stirring constantly, until thickened and smooth. Cook for 2 minutes longer; add cheeses. Stir until smooth and well blended.
Bring a large pot of salted water to a boil over high heat. Add broccoli, and cook, stirring, until crisp-tender, about 2–3 minutes. Drain the broccoli.
To serve, divide broccoli into 6 bowls equally, spoon cheese sauce evenly among serving bowls. Top with a generous sprinkling of cheese curls. Serve immediately.
